If you love chocolate, than these triple chocolate cookies are for you. The chocolate brownie based cookies are loaded with white chocolate and dark chocolate chips. They are a chocolate lovers dream come true.
4 ounces of Baker’s Semi-Sweet Chocolate Squares, broke into individual squares
2 tablespoons of unsalted butter at room temperature
1 cup all purpose flour
3/4 cup sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon kosher salt
2 eggs at room temperature
1 teaspoon vanilla extract
1/2 cup dark chocolate chips
1/2 cups white chocolate chips
Preheat the oven to 300 degrees. In a small glass bowl add the semi sweet chocolate and the butter. Place the bowl over a small pan of simmering water. You don’t want the water to be boiling or touching the bottom of the bowl, you just want the heat from the water to melt the chocolate. With a rubber spatula slowly start stirring the mixture until the chocolate and butter melt and become smooth.
In a medium bowl add the flour, sugar, salt, baking powder and cocoa and whisk together. Slowly mix in the melted chocolate mixture until combined. Slowly add in your room temperature eggs and lastly your vanilla. Taking a rubber spatula fold in the white and dark chocolate chips. Your batter will be very stiff and resemble a brownie mixture.
Using a medium size cookie scoop place cookie mixture 2 inches apart on a parchment lined baking sheet. Bake for 18-20 minutes or until toothpick comes out clean. Allow to cool for 5 minutes before removing from baking sheet. This will help to keep your cookies from breaking apart. Cool completely and store in an airtight container. Makes approximately a dozen cookies.
